Mole is a concoction of different spices, herbs and is defining cultural staple of Modern Mexico. The recipe for mole varies from family to family and is usually a well-kept secret passed down through generations. Ingredients tend to be completely different, depending on the region where it is made - but chiles, nuts and seeds are the most commonly used.
Learn how to prepare homemade mole poblano with chicken, Mexican rice and traditional atole with Martha Nuñez. Martha is the grand prize winner of the 2019 Mercado Mole Cook-Off. She owns Taqueria Rolys with her husband and has been cooking since a very young age.
Recipies will be sent home with students, and a meal of mole with chicken and atole will be shared at the end of class. Class size is limited, please register soon.
