An enchilada is a corn or flour tortilla rolled around a filling and covered with a spicy or savory sauce. Enchiladas can be filled with many varieties of ingredients, including various meats, cheese, beans, potatoes, or vegetables. A variety of sauces can also be used to cover the enchiladas, including chile-based sauces, such as salsa roja, or salsa verde, various moles, or even cheese-based sauces such as chile con queso. Enchiladas originated in Mexico, where the practice of rolling tortillas around other food dates back at least to Mayan times.

Recipes will be sent home with students and a meal of enchiladas with jalapeño slaw and guacamole will be shared at the end of the class. Class size is limited, please register soon.
